Why are some whiskeys whiskeys and therefore change the character when you add water or ice?

In particular, I drank a little of the Suntory Yamazaki 18 years. Straight is not sweet, with an intense, and does not bite hard. With an ice cube suddenly opens, becomes sweet, extremely soft, and incredibly rich. Never I've seen anything like this before.

Whisky has to do with water. A strong whiskey mellows with a little ice or water. Those who, like me, who prefer not to try to add neat ice. I've seen much earlier with some of the highland malts. Salud!
