Sorry Dan, but the malt is not after fermentation. What is the sprouted grain is ground into a powder before any fermentation process. Malta may be related to the barley, rye, corn, or any other grain. In Scotland, a single malt refers to the product of a distillery from a single grain (usually barley, but not always). Once the malting process is complete and the sugars extracted, add yeast to start fermentation. The fermented product (which is essentially the beer) is distilled and the elderly. For single malts, the number of years in the bottle indicates the minimum age for whiskey involved (several years can be mixed to ensure consistency, but the minimum age is in the bottle.) whiskey's intention is to provide the character of the region and the individual distillery. There is no such thing as double malt. Blended Scotch is the product of the refineries in multiple regions of the world. Its aim is to provide a more even, smooth and consistent character. Personally, I think the madness of a single malt has unfortunately mixtures, which are excellent whiskey every day, in the background.
