What is the temperature required to disinfect to bar (ie, glasses, mixers) in the dishwasher?
A coworker and I were arguing about the temperature of our old dishwasher. is convinced that the temperature only has to be up to 150 degrees, but I thought the temperature was to be 180 degrees or more. Any ideas?
Most dishwashers bring the temperature of final rinse water for up to 160 degrees to sanitize. Some a little older. The water temperature should be 160 degrees on the surface of the dishes or glassware to clean properly. From the water to cool a bit to hit the dishes and glassware cooler, the recommendations are generally to have water at a higher temperature. I gathered this information from my son, who manages a kitchen. Its title is in the Hotel Restaurant Management and also took classes pre meals and sanitation and as stipulated by the State.
