The cooling prevents or severely reduces the tendency to "age hardening" that will occur to these alloys at room temperature. Not sure about the exact process by which this happens, but that's the gist of it. "Refrigerator" rivets are not used much only through the hassle of having to keep them fresh and so many other alternatives that did not exist when he came into favor.
