Veganism: not as intimidating as you thought

For some, the phrase "Vegan Cuisine" sounds like an oxymoron. For others, it seems that way of a hardcore food nutritionist. "Scary" was the word used by my roommate when I announced I was going to try to be a vegan. What many people do not know is that it's possible and even probable, for a creative chef to make vegan food so exciting and full of variety as any other kitchen.

One of the only vegan foods on the market, and that tends to scare the most profane, is the tofu. Tofu is basically a curd soy with a spongy texture and mild flavor that absorbs the flavors that are around. I'm tempted yet?

Wait. Let's try this. Imagine a plate Italian stuffed shells, loaded with tomato and basil sauce, garlic and oregano. Now imagine that instead of cheese, the shells were stuffed with a mixture of soft tofu, mixed with fresh spinach. Tofu absorbs the Italian spices and has a delicate creamy taste of their own. Would you notice the absence of cheese? Sure. Do you miss him less? Not likely.

There are many vegan recipes that are truly surprising only for its variety and flavor. Curry is a favorite of vegetarians, and is available in all its forms and flavors. Other wonderful vegan dishes include several types of stir-fries, swimming in soy sauces and fresh vegetables, salads full of fresh beans oil and sweet sauces, and spicy and delicious side dishes and many snacks. Many people, for example, love the wonderful zing of hummus and garlic do not realize that it is a food strict vegetarian diet.
