Beer Freeze

Why freeze the beer as it leaves the freezer?
please someone smart. I put the beer in the freezer at times to really get nice and cold. but sometimes when i get it out of the freezer when its nice and cold and put it on the counter … I literally can see it to freeze in front my eyes. Why is AFTER the freezer? is something to do with the temperature change? but .. im confused is warming. someone please clarify.
I think what we're seeing is the freezing of condensation. Take a beer from the freezer. It is very cold – so the moisture condenses in the air. This is often called "sweating." So, given that beer is less than zero, the moisture freezes. The beer inside will remain (mostly) liquid, however. If you freeze a beer to the point where most becomes ice, congratulations – you've just freezing distilled. That is a process called "Fractional crystallization". The water freezes out of the beer, leaving all other more concentrated. This includes alcohol, of course, but also contains other chemicals that may be less desirable. AppleJack, for example, is performed by freezing and distillation of cider (traditionally in New England placing the barrel in a snowbank.) AppleJack is known to contain concentrated levels of chemicals that give you a worse hangover because of this process. I do not know for sure what happens with beer.
