Looking to make a chuck roast … but not the traditional way how this sounds to you?

I have a barbecue plate and I was thinking of putting a spin in the way they cook and wanted to get some opinions. I'm thinking of cooking the meat in beer, gravy, and garlic tonight. The following morning I put in a pot with some cold beer and stock, and some caramelized onions to drippings. After sitting all day I'm thinking shreading searving up and over a thick piece of crusty bread with melted cheese, either some comked gouda or cheddar apple, something that melts well and cheesey. Therefore, almost will be like a cheese steak and beer cheese soup meat combo … What do you think? Any suggestions for cheese to use? And I'll Serve with a horseradish sourcream Thanks by st. pattys days suggestion … but my husband is a man Yuengling!

the sounds friggin delicious gouda sounds good, but a provalone smoking can be good, well .. or even continue with smoked gouda gouda but a mmmmmmm for the beer, which has yet to ask, but I'm going to suggest killians Irish Red … Yuengling is good mmmmmmmmm oohh too:) and no problemo:-p
