Slow Cooking Recipes: Part 1

The slow cooker is perhaps one of the most useful yet underrated small appliances around. Not only can you throw in a lot of ingredients for cooking, while you perform your daily tasks, but the food is full of flavor that has taken hours to simmer. Most people tend to wait until the weather takes a turn for the cold season before digging the clay pot "in the back of the cabinet, but the versatility and comfort offered by the clay pot makes a great kitchen tool throughout the year!

This article is the first in a series that features some of my favorite recipes slow cooker. I hope you enjoy them and continue reading the series!

BBQ Pork Sandwiches

Ingredients:
1 (14-ounce) beef broth
3 pounds boneless pork ribs
1 (18 ounce) bottle barbecue sauce
Burger buns or rolls (about 12 sandwiches)

Getting There:
Pour the broth in slow cooker, then add the pork chops. Set the pot over high heat, cover and cook for four hours (or until the meat pieces easily with a fork). Remove meat from pan and crumble. Transfer the sliced meat to a Dutch oven and add sauce barbecue. Stir well and then bake at 350 degrees F for half an hour. Spread the roast pork buns in one of the halves, sprinkle a little pepper in it, then cover with remaining bread half.

Taco Soup

Ingredients:
3 whole skinless, boneless chicken breasts
1 onion, chopped
1 can of beans chili
1 can black beans
1 can whole kernel corn, drained
1 (8 ounces) tomato sauce
1 (12 ounce) can or bottle of beer
2 cans diced tomatoes with green chiles, undrained
1 package taco seasoning
shredded cheddar cheese
sour cream
tortilla chips

Getting There:
Combine the chili beans, black beans, corn, beer, onion, tomato sauce and diced tomatoes in slow cooker. Add seasoning taco and stir well. Place chicken breasts on top of the mixture and spoon a little of the mixture on top. Set the slow cooker to simmer and simmer for five hours. Remove the chicken from the soup and blend with a fork. Return the shredded chicken in the soup and cook for two hours. Serve with grated cheese sour cream and crushed tortilla chips.

Roast

Ingredients:
5 1 / 2 pound beef roast
2 cans cream of mushroom soup
1 (1-ounce) package onion soup mix dry
1 1 / 4 cups water

Getting There:
Add cream of mushroom soup, water and dry onion soup mixture to slow cooker. Add beef to pan and spoon soup mixture over the roast. Set at a high temperature and cook for about four hours. If you want a more flavorful roast, cook on low setting for eight hours. Serve with a spoonful of soup mix and vegetables of your choice.

Chicken and Dumplings

Ingredients:
4 skinless, boneless breast halves
2 tablespoons butter
2 cans condensed cream of chicken soup
1 onion, finely minced
2 packages of refrigerated cookie dough

Getting There:
Bring the soup, butter, onion and chicken in slow cooker. Complete with water until chicken is covered. Cover the slow cooker and set to a high temperature setting. Cook for about five hours. Average hours before serving, place cookies in the slow cooker. Make sure the dough is well cooked before serving.
