What would you suggest wine with this menu, please?

I have a good champagne, a bottle of Taylors vintage port, I need a bottle to go with each course – no matter the cost for Beginners: salmon mousse wrapped in smoked salmon, garnished with shrimp, served with Melba toast and a salad main course side of sirloin steak with sauteed mushrooms and beer battered onion rings, hand cut chips, grilled tomatoes, peas and salad with a hot Crepes black cherries, vanilla ice cream served with home-made cheese crackers and Irish coffees and petit fours Puerto Cognac

A good champagne go well with your starter. A barrel aged Chardonnay will also work. Main Course is colored red with a backbone such as a Cabernet Sauvignon or Syrah well developed. You could also use a good Cabernet, Merlot blend. Serve cheese biscuits here as a palette. Use cleaner port for pancakes, if a sprinkling chocolate on top that will make them even better with the port. Irish coffee with petit fours and continue with the port and cognac.
