The 3 biggest lies of Bartending
In my time as a waiter, I have come across what I like to call the "3 Big Lies of Bartending".
A long time ago before I set foot in this industry, I was convinced by others that the following "requirements" to become a successful bartender. Well, I have had great success in this industry as a bartender, and let me tell you, I came without any of the so-called "requirements" listed below, and you can too.
So here they are:
* Bartending Lie # 1 – You must know hundreds of drink recipes to be a great bartender. Nothing could be further from the truth! I can do the same twenty drinks every night at the nightclub I currently work. Sure, there are drinks other than those twenty that get occasionally requested, but nothing that can not handle.
If I get "confused", I ask the bartender I'm working on, look at the guide recipes, or ask the customer. Yes, indeed, if all else fails, ask the customer how to do it. There is no need to have an ego in this. If the client doesn know I will try to reduce a color / flavor and make it one of my specialties (which end up liking better anyway).
No matter what type of establishment you work or want to work less, have a base of twenty drinks are ordered, not hundreds. Sure, it's good to have a murderer one drink recipes up his sleeve when someone asks "I was a good thing." But you do not have to know hundreds of drinks before going behind the wood. There is no need to numb your brain studying recipe books to become a waiter to make money.
* Bartending Lie # 2 – You need a certificate or license to bartend Bartending. I'm not sure that this concept came into existence (although schools barman insurance benefits). But there is absolutely, positively no law that requires you to have a license or certificate to serve drinks.
Now, many states and provinces require certification from alcohol awareness to ensure responsible service. But this is required by all service personnel in the industry and is issued by the government for a fraction of the cost of a bartender school tuition. I have nothing against schools in bars, which are a great way to get your foot in the door and get confident behind the bar, but their "certificates" are not required to serve drinks.
* Bartending Lie # 3 – need to "pay their dues" and work as a bar back for years to serve drinks in a warm place bathed in big bucks. This is absolute bull! I know many bartenders that got behind the bar faster than you can imagine, including myself.
If you think that it takes years, which will take years. If you believe there is a better and faster, you will find one. Anyway, give reason yourself.
