Bartending Interviews

What is a good line to use to close an initial interview through email when the target is a 2nd interview?
I it was a job interview in bars, which seemed to go very well (you never know, of course) and ended with the interviewer told me he would contact people in the next couple of days for a second interview. Here are a couple of other things I wonder: Is it an exaggeration considering that letter because it was an initial screening interview or should I send emails after each interview? If I can explain why I am the perfect fit for them in my initial thanks email or should "save some ammunition" for the second interview? Any words of wisdom would be greatly appreciated. Thanks advance. On the other hand, I must wait until the next day before sending e-mail thanks for what would more as a reminder of our interview? I that if I send it immediately that it would lose some of its effectiveness.
Following up an interview with a letter of thanks is always appreciated. Also communicates his interest in pursuing the job.
